This 2004 Semillon was produced from single vineyard 15 year old vines sourced from a farm in the Franschhoek valley. |

The summer was dry with a small amount of rain. The conditions were ideal for developing good fruit flavours and aromas. |
| HARVESTING: |
| |
The grapes were hand harvested in the coolness of early morning on 22nd and 23rd February. |
| VINIFICATION: |
| |
The bunches were gently pressed to release a crisp, clear juice and this cold settled for two days. The juice was racked to fermentation tanks and fermented to dryness over 12 days. Approximately 5% of the wine was aged in French oak barrels. The wine was racked off the lees and a small percentage of Sauvignon Blanc blended with it before being cold stabilised, filtered then bottled. |
| TASTING NOTES: |

This delicious full bodied wine has a greenish yellow straw colour. The flavours and aromas have layers of citrus fruit and green apple. The oak has imparted a nutty richness which adds complexity and depth. The palate is crisp and dry with the added Sauvignon Blanc imparting a fresh tropical fruitiness. The finish is long, elegant and crisp. |

Semillon is best enjoyed chilled as an aperitif at any time of the day. It can be partnered with a wide range of foods or snacks. |
