SOURCE: This 2010 Cabernet Sauvignon was produced from fully ripe grapes harvested from Haut Espoir in the Franschhoek region.
WEATHER: Prior to ripening, the conditions were dry, with veld fires on surrounding mountains. Fortunately no smoke taint could be detected in the wine.
HARVESTING: The grapes were hand harvested in the coolness of early morning on the 25th of February.
VINIFICATION: After de-stemming the berries were fermented to dryness in small open fermentation tanks where 83% of the wine underwent wild fermentation, the rest was inoculated. After fermentation the wine was transferred to 3 X 500L French oak barrels for 5 years maturation.

FOOD ACCOMPANIMENT: Red meat especially lamb, game birds, rich meaty casseroles, char-grilled meat or game.
TECHNICAL ANALYSIS: alc. 15.18% - pH 3.49 - Total acid 7.28 g/l - Residual Sugar 3.07 g/l
