A total of 5 cultivars were used in this blend. The varietals were fermented separately using different methods of fermentation. The Sauvignon blanc, Semillon, Viognier and Chenin Blanc were all fermented in stainless steel tanks and the Chardonnay underwent wild fermentation in older oak barrels. The Chardonnay underwent MLF, to increase the mouthfeel, the other components were used for their freshness and fruit forward expression of the terroir. After blending, the components were left in stainless steel tanks for 1 month prior to bottling.
Lime zest and white stone fruit dominate the nose. The palate is vibrant with fresh acidity, peach and white pear sweetness and a rich textured finish.
40% Sauvignon blanc; 26% Viognier; 25% Semillon; 9% Chardonnay
The Grapes were hand harvested in the coolness of early morning on various dates from February to April and transported back to the cellar under cold conditions to retain freshness.
The grapes for this year’s blend were sourced from neighbouring Franschhoek farms in the Bo-Hoek valley.
Prior to ripening, the conditions were extremely dry and hot.
