SOURCE: The grapes for this year’s blend were sourced from Haut Espoir and neighboring Franschhoek farms.
WEATHER: Prior to ripening, the conditions were extremely dry. This however endorsed great quality Cabernet Sauvignon and Shiraz.
HARVESTING: The grapes were hand harvested in the coolness of early morning on various dates from March to April and transported back to the cellar under cold conditions to retain freshness.
VINIFICATION: 3 Cultivars were used in this blend. The components were fermented separately in open top fermenters, some batches undergoing wild fermentation. Post fermentation maceration lasted 1 month before pressing and transferring to older oak barrels. The components were aged for 30 months in barrel before blending and bottling.
Tasting & Analysis
TASTING NOTES: Warm spices dominate the nose with wild cherries and sweet tobacco flavours. The palate is vibrant with dark fruit and typical white pepper. A smooth and rich textured palate that lingers. CULTIVARS 48% Merlot; 31% Petit Verdot; 21% Cab Sauv
