SOURCE: This 2013 Cabernet Sauvignon was produced from fully ripe grapes harvested from Haut Espoir in the Franschhoek region.
WEATHER: Heavy rain consistently throughout the year and snow on the mountains in November.
HARVESTING: The grapes were hand harvested in the coolness of early morning on the 27th of March.
VINIFICATION: After de-stemming, the grapes were partially crushed and transferred to stainless steel tanks. The juice was inoculated with yeast and 3 pumpovers per day were done. After fermentation the wine was pressed. Press and free run wine was kept separate and transferred to French oak barrels, where it underwent malolactic fermentation and matured for 39 months.
Tasting & analysis
TASTING NOTES: The dominant fruits on the pallet are cranberries and plums. The tannins are silky smooth and integrated with oak notes to support the pallet and round off this elegant wine.
FOOD ACCOMPANIMENT: Red meat especially lamb, game birds, rich meaty casseroles, char-grilled meat or game.
TECHNICAL ANALYSIS: alc. 14.69% - pH3.70 - Total acid 5.80 g/l - Residual Sugar 2.48 g/l
