SOURCE: The grapes for this year’s blend were sourced from Haut Espoir and neighboring Franschhoek farms.
WEATHER: Prior to ripening, the conditions were extremely dry. This however endorsed great quality Cabernet Sauvignon and Shiraz.
Harvesting: The grapes were hand harvested in the coolness of early morning on various dates from March to April and transported back to the cellar under cold conditions to retain freshness.
VINIFICATION: A total of 4 cultivars were used in this blend. Some components were fermented in stainless steel tank and the rest in open top fermenters. On the Merlot component stems were added to tank during fermentation to enhance stalky tannins and complex mouthfeel. After fermentation all cultivars were aged in French Oak Barrels for 44 months until final blending.
Tasting & Analysis:
TASTING NOTES: Cherries and sweet tobacco flavours on the nose that carries through on the palate, accompanied by cassis and eucalyptus.
FOOD ACCOMPANIMENT: This Blend may be enjoyed with a wide variety of occasions and cuisines.
