This 2015 Merlot was produced from fully ripe grapes harvested from Haut Espoir in the Franschhoek region
Prior to ripening, the conditions were extremely dry and hot.
The grapes were hand harvested in the coolness of early mornings on 13th March.
The grapes were de-stemmed and partially crushed and transferred to open plastic tanks for fermentation. After inoculating the juice with yeast, punch downs were done for colour and tannin extraction. Post fermentation maceration was done for 1 month, before pressing and transferring to 500L French oak barrels for maturation. Maturation lasted for 36 months before bottling.
Dark cherry and sweet plum notes on the nose follow through to the palate. Layered fruit and oak with soft velvety tannins finished off with an elegant, yet rich texture.
