
Vineyard
SOURCE: This 2010 Shiraz was produced from fully ripe grapes harvested from Haut Espoir in the Franschhoek region.
WEATHER: Prior to ripening, the conditions were dry, with veld fires on surrounding mountains. Fortunately no smoke taint could be detected in the wine.
HARVESTING: The grapes were hand harvested in the coolness of early mornings on 2nd of March and the 8th of March. Harvested in two batches to ensure physiological ripeness.
Cellar
VINIFICATION: After de-stemming the berries were inoculated for fermentation in small open fermentation tanks. After fermentation the wine was transferred to 50% New French oak barrels. Malolactic fermentation was done in barrel. The wine matured in these barrels for 5 years before bottling.
Tasting & Analysis
FOOD ACCOMPANIMENT: Rich stews, barbecued meat and matured hard cheeses. This wine is released ready to drink and will develop further with bottle ageing.
TECHNICAL ANALYSIS: Alc. 15.91% - pH 3.62 Alcohol 15.91% - Total acid 7.1 g/l - Residual Sugar 4.16 g/l
